Rum got its first doubtful reputation as the spirit for seafarers and pirates. Not surprisingly the mutineers in Robert Louis Stevenson‘s „treasure island“ sing about „Fifteen men on the dead man‘s box, Ho ho ho and a bottle of rum.“ But the times when rum found its way from the Caribbean to Europe only as a simple by-product of the sugar production are long gone. Nowadays the „liquid gold“ convinces with exquisite qualities which are no longer only from the Caribbean and Central America but also from other sugar cane regions such as Mauritius and Réunion, the Canaries and Cape Verde.
Six year aged Caribbean rum distillates are perfected in the distillery with a special barrel finish. By using the finest ingredients, the aroma profile is rounded off and a unique complexity and abundance is achieved. After the blending our BLACK SPICED RUM is being stored in glass balloons at 65 % vol. before it’s adjusted to 42 % vol. with purest spring water. The gentle filtration and 14 days rest create a perfect balance for the mate black bottle with our unique BLACK SPIRITS look.
No less than 74 herbs and essences the so called botanicals from 19 different countries of the Alpine region, the mediterranean sea area as well as Madagascar and India are responsable for the individual fine note and unique standing of BLACK GIN. Juniper, coriander, cinnamon, clove and chamomile can be tasted, a trace of ginger and vanilla, the clear sweetness of ripe oranges. It is fun to taste the other 67 essences sip by sip – even if it remains an unsolvable task.
Initially the base passes through the distilling bubble 12 times before the obtained 90% vol. alcohol is being filtered
deeply with activated carbon at -32° C. 62 of the Botanicals are going through their maceration in stainless steel tanks
for 12 days with a constant temperature of 24° C. The fine distillation is carried out by adding the missing other highly sensitive fine botanicals. To bring BLACK GIN to its enjoyment strength of 45 % vol. we use Bad Überkinger spring water for the ‚marriage’ which is carried out for over two weeks at 10° C exactly. The last filtration follows at 4° C before the spirit rests in stainless steel barrels where it awaits the unmistakable matt BLACK SPIRITS bottle.
We only use finest wheat and rye grain of selected regional producers. Only the highest quality level, the so called elite grain is processed.
During the production the spirit has to pass the distilling bubble six times until the 84 % vol. vodka is won. By using fresh spring water the vodka is brought to enjoyment strength of 40 % vol. and needs to rest for minimum six days at an exact temperature of 28° C. The protein filtration afterwards and the cleaning activated carbon bath add the desired purity. After these steps it rests for at least six months in glass balloons and stone tanks to be filled to its unmistakable matt BLACK SPIRITS bottles.
